This is the texture of raw lengua, and this is exactly why people, as I said before, fry the hell out of it.
Now imagine biting through it and chewing that texture until you could swallow it. Feel how squishy it is, how it almost bounces back like a sponge. It can be served in several different styles, but for the sake of sedating its god awful texture, most people prefer to dice it up into tiny bits and fry the hell out of it.
